Butterscotch Syrup for waffles

  • 1 small box Jell-o or other flavored gelatin
  • 1 cup water
  • 1/2 cup sugar

The directions are very simple:
  • Mix the gelatin, sugar and water together in a small saucepan and bring to a rolling boil.

  • Pour into pitcher and let cool until syrup thickens slightly.
Serve over pancakes, waffles or even ice cream while still warm.

You might consider cutting the ingredients in half if you're only serving a small group. This syrup doesn't store well -- it becomes to thick over time.

Enjoy as many flavors of pancake syrup as there are flavors of Jell-o with this easy recipe.

Energy Bites

Yield: 12-15 bites
Prep Time: 5 minutes
Total Time: 10 minutes

Ingredients:

1 cup (dry) oatmeal (I used old-fashioned oats)
1/2 cup ground flaxseed
1/4 cup slicedwalnuts, chopped
1/8 teaspoon cinnamon
a pinch of salt
1/2 cup + 2 tablespoons creamy peanut butter, melted and slightly cooled
1/2 cup + 1 tablespoon honey or maple syrup
1/4 teaspoon vanilla extract
2 tablespoons mini chocolate chips (I used chopped peanut M&M's.)
1/4 cup ground peanuts or ground almonds, to roll the balls in. (I used Cinnamon sugar)

The original Bites:

Directions:

Combine oats, walnuts, flaxseed,  salt and cinnamon in a large bowl and stir.
Melt peanut butter and allow it to cool slightly (I melted mine in the microwave for about 30 seconds, then stirred), then stir in honey/maple syrup and vanilla extract until it's combined. Once peanut butter has cooled a bit, pour it over the oat mixture and mix well with a spoon then bring together with your hands. Once mixture is sticking together, fold in chocolate chips or M&Ms.
Roll dough into golf-ball sized (or slightly smaller) balls, then roll in ground peanuts or ground almonds. These can be eaten at room temp but we really like them stored in the fridge!

My  Energy Bites: Remember I added different items that my family enjoys.
